Pilcher (2002) makes a good argument as he looks at what modern machinery has done to the food in Mexico. There is a great deal of evidence presented by the author but the article to some extent becomes confused and muddled. The author makes comparisons regarding modernization, globalization and other phenomena, but he uses many different examples outside of even Mexican fare. Yet, the topic is important and the author also addresses economic consequences due to the status quo.
